An afternoon tea made from Darjeeling, Assam, Yunnan and Wuyi black teas, goji berries, toasted start anise and passion fruit infused vinegar.   Recipe inspired by a sour beer and the constant search for new flavors. Medium bodied, balanced malt and astringency with notes of cooked fruit, light spice, tropical undertones and a deliciously delicate sour finish.  


65 grams loose tea (enough for approximately 21 8 oz servings), lovingly packed in our tea matchbox.  Includes metal clip to reseal bag once opened.

We start by lightly spraying the vinegar onto the Yunnan tea, then gently tossing these leaves to help distribute and homogenize. From there the tea is placed on racks and gently dehydrated with low heat before being sealed up and allowed to rest.  The other teas are weighed out to the recipe and blended together.  Star anise is toasted along with the goji berries until aromatic and then folded into the tea blend.  In the last step, the two "blends" are folded together and allowed to rest before final packing. 



Hot:  We recommend using 1 heaping teaspoon, or 3.0 grams of dry tea leaves per 8-10 oz water just off boil. Bring water to tea for this blend, place tea in pot or brewing vessel of choice and pour water directly over leaves. Steep for 5 minutes. 

Cold:  Steep per hot tea suggestions and allow to cool before placing in refrigerator or pouring over ice.
